Curried chicken thighs

  • 6 Chicken thighs
  • 3 Chopped onions
  • 2 Cropped Shallots
  • 500 Milliliters Broth
  • 1 Can of coconut milk
  • 1 Clove of Garlic, minced
  • 3 Grated Coconut
  • 2 Teaspoons Curry Paste
  • A few Pieces of Fresh pineapple or canned
  • Oil
  • Salt and Pepper


  1. Brown the thighs on each side in a frying pan with a little oil. Reserve the meat in a warm dish.

    Saute onions, shallots and garlic in the pan, and place the thighs on this, in preparation. Pour the coconut milk and broth, curry paste and add pineapple and shredded coconut. Season.

    Simmer for 45 minutes over very low heat.
    Serve with rice.
